    If you like cheese, then you're going to love my Burnt Basque Chilli Cheesecake. Itโ€™s one of those cheese appetizers that looks really impressive, but is actually super simple to make. You just add cream cheese, blue cheese, brie, goats cheese and a few other ingredients to a bowl, give them all a whisk, and bake. It's the perfect cheese appetizer that is an absolute crowdpleaser.

    If you're looking for appetizers with goats cheese, appetizers with Philadelphia cream cheese, appetizers with blue cheese, ooooor, appetizers with brie, then this recipe is your pot of gold at the end of the rainbow, because this savoury cheesecake includes all four of those cheeses. You could optionally add in boursin cheese too, which would be delicious!

    Why You'll Love This Recipe

    The BEST cheese appetizer: including blue cheese, cream cheese, goat cheese, and brie, it's honestly such an impressive recipe to make for friends and family. Another crowd-pleaser are my feta spring flatbreads or my deep-fried stuffed olives, if you're looking for appetizer inspiration!

    Easy: All you've got to do is add all your ingredients into a large bowl, give them a whisk, and then bake in the oven. It's SO simple.

    Savoury: We've all heard of the viral burnt Basque cheesecake, a gorgeously sweet dessert. Well, this is its savoury cousin, and she's delicious.

    Ingredients & Substitutions

    Cream cheese: I've used Philadelphia cream cheese for this appetizer. You can use any soft cream cheese of your liking.

    Blue cheese: I used Castello's soft blue cheese. Once again, you can use whichever type of blue cheese you like, just make sure to cut off the rind.

    Brie: Cut off the rind of the cheese and just add in the soft part. I used President Brie.

    Goat cheese: Once again, cut off the rind of the goats cheese, unless you're using all soft goat cheese.

    Alternative cheeses: Boursin, feta, ricotta, roquefort, gorgonzola, or cottage cheese are all great options.

    Eggs: Fresh, room temperature eggs.

    Double cream: Make sure the cream is at room temperature.

    Chilli: I've used two fresh red chillies which added a great heat to the dish. You can omit this if you don't like spice, or use chilli flakes if you don't have any fresh ones.

    Step by Step Instructions with Photos

    Step 1: Preheat your oven to 220C/430F.

    In a large bowl, combine your cream cheese, blue cheese, brie (rinds off), and goats cheese (rinds off).

    Step 2: Mix using an electric whisk until light and fluffy. Next, add in the sugar, salt, and pepper and give it another mix.

    Step 3: Crack your eggs one at a time into the mixture, whisking after each egg to combine it with the cheese until you have a smooth mixture.

    Step 4: Pour in your double cream, sprinkle in 2 tablespoon all purpose flour, and add in your chopped chillies. Combine using a hand whisk until everything is incorporated.

    Step 6: Get your baking loaf dish and coat the base and sides with butter. Lay a piece of parchment paper down into the dish, then coat that with another layer of thin butter. Place another piece of parchment paper down into the loaf, but at a slight angle, so the two pieces of paper overlap. Press down so that the paper is tight to the dish. Gently pour your savoury cheesecake mixture into the dish.

    Step 7: Bake in the oven for 45 minutes or until the top is golden brown, then remove from the oven and leave to cool. Once cool, place in the fridge for 3 hours or until the cheese appetizer is set. Enjoy with sliced baguette!

    Top Tips!

    1. It'll be easier for you to whisk all of your ingredients if they're at room temperature.
    2. You want to make sure your oven is really hot, so if it has a tendency to be less powerful than other ovens, put it on a really high heat, more than 220C/430F.
    3. Make sure to cool your burnt Basque chilli cheese cake for at least 3 hours (uncovered). You can then store it in a container or in the loaf, covered, for up to 3 days.

    What To Do with Leftovers

    Storage: First, leave to cool, uncovered, in the fridge for up to three hours. Then, place it in a container or leave it in the loaf dish and cover. Store for up to 3 days.

    Freezing: Once cool, place in an airtight container and into the freezer for up to three months. To defrost, remove from the freezer and leave in the fridge until defrosted. The texture might be a bit different, so I'd definitely recommend making it fresh to eat.

    Can you serve cheese as an appetizer?

    Absolutely, this burnt Basque chilli cheesecake is the perfect cheese appetizer, that combines four different cheeses.

    Is the lid of the cake burnt?

    You don't really want to burn it, you want it to go a golden brown, so it adds a little bit of depth of flavour, but doesn't affect the taste negatively.

    Why is my burnt Basque not burnt?

    Because you haven't put your oven on hot enough. Or you haven't left your cake in there long enough. The ideal settings are 220C/430F for 45 minutes.
