    Why Crunch Matters In Salads

    If you’re anything like me, you can’t stand a boring salad. Don’t get me wrong, I love lettuce and greens, but the world of salad has so much more to offer than a limp lettuce, a sad tomato, and maybe… a slice of cucumber (if you’re lucky). 

    Crunchy salad toppings to the rescue! With a sprinkle here and a handful there, you really can transform a basic side salad into a delicious meal in its own right. And there are some very good reasons why you should elevate your salad topping game too:

    • Texture contrast: Crunch breaks up the softness of greens and gives your mouth something to chew on (literally and mentally)
    • That “full-feeling”: Crunchy toppings actually slow your eating down and make your salad feel more substantial, so you get nice and full more quickly 
    • Extra flavor: Toasted seeds, cheesy crisps and much more... carry seasoning and elevate bland greens into something more substantial and yummy

    So… keep scrolling for my favorite 12 crunchy salad toppings to elevate your greens.

    1. Almonds, Walnuts, and Pecans

    I’m going to kick things off with what I consider the staple salad toppers: nuts and seeds. These are my go-tos when I want to add healthy fats, some plant protein, and a nutty bite. I actually have a big jar of these mixed toasted nuts ready to go at all times! And the great thing about these is that you can use them on other dishes like yogurt, soups, or… just something to snack on.

    Let’s break down some of my favorite nutty salad topping companions. If I could choose only 3 nuts to grace the top of my salads forever more, it’d have to be these three:

    • Almonds are firm and snappy, great with citrusy or Asian-style dressings
    • Walnuts are softer and earthy, brilliant with blue cheese and apples. They’re also a great addition to my best chicken salad without celery recipe if you’d like to give it a go.
    • Pecans are buttery and naturally a little sweet, and honestly… I could eat them by the bucket load (especially the candied pecans from Trader Joe’s that I discovered on a recent trip to New York!)

    My Quick Honey-Roasted Nut Recipe:

    If you’re looking for a quick honey-roasted nut recipe simply toss 2 cups of your nut of choice with 1 tablespoon melted butter, 1 tablespoon honey, and a pinch of salt. Roast at 350°F (175°C) for 12–15 minutes, stirring once. Let them cool completely before storing or using.

    2. Pumpkin, Sunflower, and Pine Nuts

    These guys may be small, but don’t let that fool you… these salad seed toppings pack serious nutrition. I find myself going back to them again and again. Pumpkin seeds (aka pepitas) are my preferred choice because they toast in just a few minutes and work with nearly everything. Just pop some seeds on a tray at 360°F (180°C) for a few minutes and they’ll be golden, nutty, and ready to sprinkle.

    3. Roasted Chickpeas

    Sometimes, after one too many “just leaves” lunches (and when I’m all “croutoned-out”) I need a salad with a bit more bite. That’s where legumes and grains come in.

    Throughout the year I’ll go through phases of making big batches of roasted chickpeas to snack on throughout the week. Love and lemons has a really good recipe if you’ve never done it before. They’re crisp, salty, and add a satisfying crunch. 

    My seasoning ideas:

    • Spicy: Smoked paprika + cayenne + sea salt
    • Savory: Garlic powder + rosemary + olive oil
    • Herby: Dried oregano + lemon zest + pepper

    Quick air fryer method:
    Toss a drained can of chickpeas (Bold Bean Co. are my faves!) with olive oil and seasoning, then air fry at 360°F (180°C) for 12–15 minutes, shaking the basket halfway. If they’re still soft in the middle, you can add a few more minutes or notch it up to 200°C, but keep an eye on them so they don’t burn. 

    If you end up with lots of leftover chickpeas then why not give my honey harissa chicken pasta with chickpeas a go? Full of flavor and very simple to make. My prawn chorizo chickpea pie is also an option if you’re feeling more adventurous! Great for a balmy summer evening.

    Storage tip: Let them cool completely before storing them, otherwise you’ll have some soggy chickpeas on your hands… (been there, done that…)

    4. Crispy Quinoa or Crispy Rice Salad Toppings

    I’m sure you’ve been there too… you cook too much quinoa, pop it in the fridge with the best intentions… and then forget about it until it’s time to throw it out. This was until I heard about crispy quinoa! Simply spread it out on a tray, toss with oil, and bake until golden and crisp. It transforms into protein rich salad crunchies that I think you’ll love. Justine Snacks has a simple and delicious recipe I’d definitely recommend.

    This crunchy salad topper is really great on Mediterranean or grain-based salads, especially with lemony dressings and crumbles of feta.

    5. Root Vegetable Crisps

    Okay, for a long time I ate vegetable crisps because they made me feel like I was eating healthily while snacking… But, they’re not just for snacking! They’re amazing on salads, adding color, crunch and little bursts of flavor. Sweet potato, beetroot, and carrot chips are a dream on autumn salads. We’ll sometimes make a batch when the oven’s already on for dinner, for a cheeky pre-dinner snack.

    These really are some of my favourite crunchy salad ideas when I want something a bit different.

    How to make them at home:
    If you don’t fancy store-bought, then you’re in luck as they’re very easy to make. Slice thinly (a mandolin helps), toss in a bit of oil, sprinkle with salt, and bake at 320°F (160°C) for 20–25 minutes. Flip halfway and watch closely toward the end... They can burn fast but taste amazing when done right. And, if you’ve got leftover sweet potatoes why not try my sweet potato pasta sauce? Totally plant based and totally delicious.  

    Short on time? The store-bought versions totally work too. Just check the label for minimal ingredients and no weird oils.

    6. Apple and Pear Chips

    When you want a sweet, light crunch (especially in a summery salad) dehydrated apple or pear chips are a game-changer. My partner isn’t normally big on salad, but when I toss a few apple chips into a goat’s cheese and walnut combo, suddenly he’s asking for seconds and thirds.

    Top tip: Thinly slice apples or pears and bake at 210°F (100°C) for 1.5–2 hours. Sprinkle with a touch of cinnamon if you’re feeling cozy, or leave them plain for a fresher, more summery feel. And if you have leftovers, just pop them into my apple fennel salad.

    They’re perfect salad crunchy toppings when you want to balance out salty cheeses, peppery greens, or light vinaigrettes. 

    7. Parmesan Frico Chips

    If you’re a cheese fan, I think you’ll agree with me that it makes most things better. So when I discovered you could make paremsan crispy, it was a game changer. These cheesy salad crunch toppings are a mouth watering addition of flavor.

    Frico is just a fancy way of saying “baked cheese crisp,” and it’s so easy. We make these in the microwave when we’re low on time, or in the oven if we’re feeling fancy..

    Quick method:
    Grate 1 tablespoon of parmesan into a little mound and just use the back of a spoon to flatten and form a circle on a parchment-lined tray or plate. Microwave for 30–45 seconds or bake at 390°F (200°C) for 5–6 minutes until golden. Add herbs like thyme or chilli flakes for extra flair.

    They’re salty, rich, and the perfect crunchy salad topper. 

    8. Bacon Bits and Crispy Prosciutto

    These aren’t everyday toppings for me, but when I’m looking to make a real 'fill your face salad', a few crispy bacon bits or shards of prosciutto are a must. Just chop and fry until crispy, then drain well. They’re especially perfect in a Caesar salad… salty, crunchy, and just the right amount of indulgent.

    Tip for vegetarians: Ever tried coconut bacon? Just toss coconut flakes with soy sauce, maple syrup, and smoked paprika, then bake until crisp. It’s got a really good crunch on it!  

    9. Homemade Crunchy Croutons 

    No list of crunchy salad toppings to elevate your greens would be complete without a mention of the trusty crouton! We all know and love croutons, but I promise you there’s a whole world beyond cubes of stale bread bought from a store. Think homemade pita crisps or even fried sourdough crumbs.

    Why not try my easy homemade ciabatta croutons? These ciabatta croutons are crunchy on the outside and soft on the very inside. The seasoning makes the bread taste delicious, using dried oregano, paprika, grated parmesan, and olive oil. And, I've got recipes for both oven-baked and air fryer! Another option is 'cheese croutons', just toss them with grated cheddar before baking... they’re ridiculously good.

    10. Wonton Strips 

    If you followed me for a while then you know I absolutely adore Asian-inspired cooking! Well, adding crispy wonton strips on top of an Asian-inspired salad might just blow your mind. And if you’re looking for some Asian-inspired salads I just have to let you know about my epic Butter Bean Salad, which only takes 10 minutes to make and is inspired by wonderful Vietnamese flavours. 

    Top tip: Cut wonton wrappers or corn tortillas into strips, brush with oil, and bake at 360°F (180°C) for 8–10 minutes. Alternatively, you can fry them if you’re looking for extra crunch.

     11. Air-Fried Veggies Crunchy Salad Toppings

    Air fryer to the rescue, again! The air fryer has been a bit of a game changer in our house, giving the same satisfying roasted texture with way way less oil. It’s a lifesaver if you’re looking for low calorie crunchy salad toppings.  

    Some of my favorite veg to air fry:

    • Carrots
    • Courgette
    • Beetroot
    • Sweet potato
    • Kale (yes, it actually works!)

    Em’s favorite seasonings: 

    • Paprika + garlic powder
    • Nutritional yeast or parmesan (adds an umami/“cheesy” flavor) + sea salt
    • Rosemary + black pepper (Best for root veg like sweet potato or beetroot)

    12. Crispy Herbs and Alliums 

    Tiny, but powerful, I’m a sucker for some crispy herbs. I find these really easy to make and a small scattering of crispy shallots or fried sage leaves can transform even your most basic salad.

    Here’s some of my faves:

    • Crispy shallots: Sweet, savoury, and golden. Fry thin slices in neutral oil until browned, then drain well
    • Garlic chips: Yes it’s a thing! Just slice garlic paper-thin and then fry until light golden
    • Fried herbs: Sage, parsley, or basil crisp up beautifully and add a lovely earthy note

    I tend to use these as finishing touches, and a little goes a long way so don’t feel the need to overdo it on these crunchy salad ideas.

    Specialty Salad Toppings To Try

    You probably know by now… I’m obsessed with experimenting in the kitchen. Whether it’s a random ingredient from the back of the pantry or something wild I picked up at a local deli, I’m always on the hunt for toppings that make people stop mid-bite and go, “Wait… what is that?!”

    Here are a few of my favorite discoveries lately:

    • Crispy chili oil (like Lao Gan Ma) drizzled over crunchy cabbage slaw, really addictive
    • Spicy coconut chips from Thai grocers. Sweet, spicy, and magic on mango salads
    • Za’atar-roasted nuts from Middle Eastern delis. Earthy, herby, and just so good

    These are the kinds of toppings I save for when a salad needs a fun little glow-up. 

    Storage Tips for Maximum Crunch

    Preventing Moisture and Staleness

    Moisture is the enemy of crunch. So, be sure to store toppings in airtight containers (glass jars work well) and keep them somewhere cool and dry.

    Top Tip: Make-Ahead Crunchy Toppings for Meal Prep

    When I meal prep salads, I often pack the toppings separately. Tiny tubs, reusable bags, basically anything to keep the crunch alive.

    Best long-lasting options:

    • Roasted chickpea
    • Parmesan crisps
    • Toasted seeds
    • Tortilla strips

    Creating a Complete Meal With Crunchy Salad Toppings

    For the longest time, my partner just didn’t believe salads counted as a “actual” meal. You know the vibe—“That’s nice, but… what are we making for the main?” But once we figured out how to load them up properly he’s the one who suggests “doing a big salad” for dinner when we’ve got leftovers knocking about in the fridge.

    These are some of my go-tos that genuinely fill us up and don’t feel like we're holding back:

    • Grilled chicken with mixed greens, toasted almonds, feta, and avocado. Creamy, crunchy, salty, fresh and protein packed. Just the best! 
    • Roasted veg with lentils, crunchy quinoa, and tahini dressing. Earthy and warm, especially good when you want comfort and health.
    • Kale with flaked salmon, crispy chickpeas, and pumpkin seeds. Honestly, delicious and a bit of a luxury option.

    These crunchy salad ideas all have a proper mix of protein, something fresh, and something crispy.

    Making Your Own Crunchy Topping Blends

    One of my favorite little salad hacks? Throw together your own custom mix. Think of it like granola… but for your salad bowl. It takes hardly any time, and suddenly you’ve got a jar of crunch that makes even the laziest lunch feel fancy.

    Here’s my super simple formula to start with:

    • 1 part nuts or seeds – like chopped almonds, sunflower seeds, or whatever’s in your cupboard
    • 1 part roasted legumes or grains – think crispy chickpeas or quinoa for that light, toasty bite
    • 1 part flavor kick – garlic chips, fried shallots, chili flakes… go wild
    • Optional add-ins: dried herbs, nutritional yeast, spice blends, a pinch of smoked salt

    Once it’s all mixed up just pop it in a glass jar with a lid and store it somewhere cool and dry.
