    Homemade Ice Cream Sandwich

    If you've never made ice cream from scratch before, then you have got to try out this 4-ingredient ice cream recipe! We're not making plain old ice cream here, we will be making the ultimate homemade ice cream sandwich!

    About The Ice Cream Sandwich

    Did you know that the ice cream sandwich is believed to have been invented by a New York City pushcart salesman in 1899?! How crazy is that, that something so delicious yet so simple, that was created over 120 years ago, is now one of the most popular summer snacks in the States. I mean really popular...48 ice cream sandwiches are eaten in the US every second!! So, for those who don't have access to store-bought ice cream sandwiches, here is your opportunity to make one from scratch!

    The 4-Ingredient Ice Cream Recipe

    I've always bought ice cream from the supermarket. However, after making this recipe (which is so so easy), there's really no need to buy it ever again. So, for this very simple recipe, all you'll need are 4 ingredients:

    • double cream
    • condensed milk
    • vanilla essence
    • chocolate chips

    First things first, pour the double cream into a large bowl and use an electric whisk to whip up the cream until it's thickened. In a separate bowl, combine the condensed milk and vanilla essence until a smooth mixture has formed. Gently fold the whipped cream into the condensed milk, then pour in your chocolate chips. Stir until everything has become a single mixture.

    Grab a tin (I used a banana bread oven tin) and pour in your sweet chocolately mixture. Place it into the freezer for around 6 hours or until frozen.

    Assembling The Homemade Ice Cream Sandwich

    Now for the fun bit. Get the tastiest cookies or biscuits you can find (I bought some chocolate chip cookies from Tesco's), and prepare them for assembly.

    Take your ice cream out of the freezer and use an ice cream scoop to spoon out dollops of the ice cream. Place a ball of ice cream in between two cookies and squeeze them together. Repeat this until you've run out of cookies. Place them back into the tin upright and back into the freezer.

    Making The Chocolate Dipping Sauce

    Now, this step is completely optional, but I would highly recommend it. Place a small saucepan of boiling water on medium heat. Gently place a small bowl on top of the saucepan (make sure the bottom of the bowl doesn't touch the water). Break-in your chocolate chunks and stir frequently until the chocolate has melted. Take the bowl off the heat and set it aside.

    Remove your sandwiches from the freezer and dip them in the chocolate dipping sauce so they're covered halfway. You'll then want to place them back in the tin and into the freezer for another 30 mins. Then, serve up and enjoy!

    Homemade Ice Cream Sandwich

    Ingredients
      

    • 500 ml double cream
    • 375 g condensed milk (one tin)
    • 1 teaspoon vanilla essence
    • 75 g chocolate chips
    • 8 cookies/biscuits
    • 1 large bar of milk chocolate

    Instructions
     

    • In a bowl, pour in your double cream. Using an electric whisk, whip up your double cream until thickened. If you lift up the bowl and tilt it, the cream should stay firm and still.
    • In another bowl, pour in your condensed milk and teaspoon of vanilla essence. Combine the two ingredients.
    • Gently fold your whipped cream into the condensed milk mixture until well combined.
    • Pour in your chocolate chips and gently stir them into the mixture.
    • Transfer the mixture into a metal tin (I used a banana loaf baking tin). Spread it out evenly and then place it into the freezer for around 6 hours.
    • Once your ice cream is set, get your cookies ready (I got some chocolate chip biscuits from Tesco). Place a scoopful of ice cream into the center of a cookie, place another cookie on top and press down. Repeat this step and then place all of the sandwiches back into the tin and into the freezer.
    • Meanwhile, make your chocolate dipping sauce by placing a bowl into a small saucepan of boiling water. Make sure the bowl doesn't touch the water. On medium heat, crack in the chocolate and stir until it's completely melted down.
    • Get your ice cream sandwiches and dunk them into the chocolate sauce so that half of the biscuit is covered. Place them back into the freezer for 30 minutes and then serve up and enjoy!
