    Spanish-Style Wontons (Chorizo Dumplings)

    These are my Spanish-style wontons. They're filled with chorizo, feta, and red peppers, placed on a bed of smokey tomato sauce, and are absolutely delicious. You could also call these chorizo dumplings or tortellini. I could eat these every day!

    There's something about these chorizo dumplings that feel so right! They're smokey, spicy, sweet, and tangy, the perfect taste combinations. If you buy your wonton wrappers from a supermarket, then you can make these in less than 30 minutes!

    WHY YOU'LL LOVE THIS RECIPE

    • FLAVOUR - the combination of smokey, spicy, tangy, and sweet flavours are gorgeous in this dish. The chorizo and feta combine so well together with a slight crunch of the red pepper!
    • Less than 30 minutes to make - yep, for this recipe, you'll only need 30 minutes to make this recipe. If you want to make the wonton wrappers from scratch, then you might need a bit longer!

    INGREDIENTS

    • Onion - you'll need red onion for both the filling and the sauce. I'd use a whole onion and then use half for the filling and half for your sauce.
    • Garlic - if you're a garlic fan, then feel free to add more than I've suggested!
    • Pepper - red bell pepper is the best option for this recipe. You'll only need half a pepper, and finely slice it into tiny cubes.
    • Chorizo - don't use cooked chorizo. You want uncooked chorizo sausage that you can easily break apart and turn into a filling paste.
    • Feta - for a bit of tang and flavour, this is a great addition to the filling.
    • Wonton wrappers - I've bought some Wonton wrappers from my local Asian supermarket, but feel free to make them yourself using this veggie wonton recipe.
    • Tomatoes - These are the base for our sauce. Tinned tomatoes will work fine for this sauce. I've used chopped tomatoes, but you could also use plum tomatoes.
    • Paprika - for a bit of smokiness and spice!
    • Sugar - I always like to add a tiny bit of sugar into my sauces for a bit of sweetness.
    • Pepper - for seasoning.
    • Salt - for seasoning.

    HOW TO MAKE SPANISH-STYLE WONTONS (CHORIZO DUMPLINGS) - STEP BY STEP

    STEP 1 - MAKE THE FILLING

    Filling for the chorizo wontons.
    • Begin by slicing your onion, garlic, and red pepper into tiny pieces. Add them to a bowl with your chorizo sausage and feta cheese. Give everything a good mix until you have a thick paste.

    STEP 2 - ASSEMBLE & COOK YOUR DUMPLINGS

    Wonton dumpling.
    • Lay your wonton store-bought wrapper on a clean surface with one of the corner points facing you and place a teaspoon of the filling into the centre of the square wrapper.
    • Fold the dumpling in half into a triangle and squeeze down the sides (you might need to brush with a bit of water so they stick).
    • Then pinch the two opposing corners and cross them together to form what looks like a little person sitting cross-legged.
    • Repeat this step for all the wontons.
    • Place your wontons in a pan of simmering water on medium heat and cook for 10 minutes.

    STEP 3 - MAKE YOUR SAUCE

    Tomato sauce.
    • Meanwhile, add some oil to a pan, place it on medium heat, and add in the rest of your red onion and garlic. Fry for 5 minutes and then add in your chopped tomatoes. Give everything a good stir.
    • Sprinkle in your paprika, sugar, salt, and pepper. Leave to simmer until your dumplings are cooked.
    • Make sure you season to taste.

    STEP 4 - SERVE UP AND ENJOY!

    • Strain your dumplings.
    • Place a ladle of your tomato sauce onto your plate. Top with your dumplings, some chopped parsley, and grated parmesan!

    VARIATIONS & SUBSTITUTIONS

    • Veggie - if you'd like to make this dish vegetarian, you can. I'd recommend swapping out the chorizo for minced mushrooms and a teaspoon of paprika.
    • Fried - for this recipe, I've boiled my dumplings, but feel free to fry them in oil. This will make them crispy and delicious. You could then use the tomato sauce as a dipping sauce rather than a base. I'd fry them in oil for around 6 minutes or until golden.
    • Dumpling wrappers - if you don't have access to wonton wrappers, you can also use circular dumpling wrappers. Just use the same folding technique as I've mentioned in the recipe, and you're good to go!

    Ingredients
      

    For The Dumplings

    • ½ red onion, finely chopped
    • 1 garlic clove, finely chopped
    • ½ red pepper, finely chopped
    • 200g chorizo sausage, mashed
    • 150g feta cheese, mashed
    • 16 wonton wrappers

    For The Sauce

    • 1 garlic clove, finely chopped

    • 1 tin tomatoes (400g)
    • 1 teaspoon paprika
    • 1 teaspoon sugar
    • ½ teaspoon black pepper
    • ½ teaspoon salt

    For Garnish

    • Parsley, chopped
    • Grated parmesan

    Instructions
