    Air Fryer Empanadas

    These Air Fryer Empanadas take less than 30 minutes to make. Packed with a gorgeous chipotle beef mince and cheese filling, they're the perfect lunch-time snack!

    What Ingredients Do I Need For These Air Fryer Empanadas?

    It's a simple recipe, using store cupboard ingredients. Simply fry your beef mince with a handful of ingredients and spices, then grab your pre-made short crust pastry, cut out into large wrappers, fill your empanadas, seal them, and then air fry them for 15 minutes! See below for the ingredients:

    • Vegetable oil
    • Garlic
    • Red onion
    • Red pepper
    • Salt
    • Pepper
    • Beef mince
    • Mixed herbs
    • Cumin powder
    • Smoked paprika
    • Chipotle flakes
    • Sugar
    • Tomato paste
    • Peas
    • Short crust pastry
    • Grated cheddar & mozarella
    • You'll also need an air fryer, but if you don't have one. Simply bake your empanadas in your oven for around 20 minutes at 200C, 180C fan.

    Ingredients
      

    • 320g pre-rolled short crust pastry

    To Serve

    • Guacamole

    Empanada Mix

    • 1 tablespoon vegetable oil
    • 2 garlic cloves, minced
    • 1 red onion, finely diced
    • ½ red pepper, finely diced
    • 1 pinch flaky salt
    • ½ teaspoon black pepper
    • 250 g beef mince
    • 1 teaspoon mixed herbs
    • 1 teaspoon ground cumin
    • 1 teaspoon smoked paprika
    • ½ teaspoon chipotle flakes
    • ½ teaspoon sugar
    • 1 teaspoon tomato puree
    • 2 tablespoon frozen peas
    • Grated cheese (I used a mixture of cheddar and mozzarella)

    Instructions
     

    • Place your frying pan on medium heat. Drizzle in your oil, then add in your garlic, red onion, red pepper, salt, and pepper. Fry for 5 minutes, then add in your beef mince and the rest of your seasonings. Once your beef mince is cooked, add in your peas. Fry for a further 3 minutes then turn off the heat and set aside (give the mixture a taste and season accordingly).
    • Remove your shortcrust pastry from its packaging and use a large pastry cutter to cut out pastry wrappers. Make sure to use all of the pastry.
    • Get one of your wrappers and place a spoonful of cheese onto one side. Top with two spoonfuls of your beef mixture. Fold the wrapper over into a semi-circle and seal it with your fingers. Pleat along the edge of the half-moon empanada to make it look pretty (see video on Instagram for more help!). Repeat this step for all of the empanadas.
    • Place your empanadas in the air fryer for 15 minutes at 180C. Serve up with some guacamole and enjoy!
