Air Fryer Empanadas

- 320g pre-rolled short crust pastry
Empanada Mix
- 1 tablespoon vegetable oil
- 2 garlic cloves, minced
- 1 red onion, finely diced
- ½ red pepper, finely diced
- 1 pinch flaky salt
- ½ teaspoon black pepper
- 250 g beef mince
- 1 teaspoon mixed herbs
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon chipotle flakes
- ½ teaspoon sugar
- 1 teaspoon tomato puree
- 2 tablespoon frozen peas
- Grated cheese (I used a mixture of cheddar and mozzarella)
Place your frying pan on medium heat. Drizzle in your oil, then add in your garlic, red onion, red pepper, salt, and pepper. Fry for 5 minutes, then add in your beef mince and the rest of your seasonings. Once your beef mince is cooked, add in your peas. Fry for a further 3 minutes then turn off the heat and set aside (give the mixture a taste and season accordingly).
Remove your shortcrust pastry from its packaging and use a large pastry cutter to cut out pastry wrappers. Make sure to use all of the pastry.
Get one of your wrappers and place a spoonful of cheese onto one side. Top with two spoonfuls of your beef mixture. Fold the wrapper over into a semi-circle and seal it with your fingers. Pleat along the edge of the half-moon empanada to make it look pretty (see video on Instagram for more help!). Repeat this step for all of the empanadas.
Place your empanadas in the air fryer for 15 minutes at 180C. Serve up with some guacamole and enjoy!
