    Kniddelen (Luxembourgish Dumplings)

    If you love comfort food, then I think you're going to really like these Luxembourgish Dumplings, Kniddelen!

    What are Kniddelen?

    These dumplings are the ultimate Luxembourgish comfort food. It’s a very simple recipe combining flour, egg, salt, and milk for the thick dough, and bacon, cream and parsley as the toppings.

    You could make this as a single portion or for a whole family. 

    The Kniddelen Dough Recipe

    In order to create the Kniddelen dumplings, you want to combine flour, egg, salt, and milk into a large bowl. Whisk until a thick pancake-like batter has formed. Place the dough into the fridge for 1 to 2 hours, covered in cling film. This recipe is for one portion, so feel free to double or triple (or times it by however many people you’ll be feeding) the quantities! 

    The Toppings & Sauce

    There is a plethora of topping options for this dish. However, I’ve picked out three of the most traditional ones; bacon, cream, and parsley. 

    For this recipe, fry the bacon first, then add in the cooked dumplings, then the cream, and then finally top the concoction with chopped parsley. Alternatively, you could create the sauce separately and then pour it over the cooked dumplings, however, I think it’s nice to fry the dumplings after having boiled them, for extra flavour!

    If you’re wanting to make this dish vegetarian, you could fry up some leeks, mushrooms, and cream. 

    Cooking & Serving Kniddelen

    Once your dough has been in the fridge for one to two hours, you want to cook the dumplings in a pan of salted boiling water until they float to the surface. Using a spoon, drop spoonfuls of the dough into boiling water. Cook them for around 4-5 minutes. Remove the dumplings and cut into bite-size pieces.

    In a frying pan, begin making your sauce. Fry up some bacon and then add in your dumplings. Fry for 3 minutes and then pour in your cream. Season well and then plate up the dumplings with a sprinkle of parsley!

    Ingredients
      

    For The Dough

    • 100g Plain flour
    • 1 egg
    • ½ teaspoon salt
    • 40ml milk

    For The Sauce

    • 2 pieces of bacon, chopped
    • 100ml single cream
    • Bunch of parsley, chopped

    Instructions
     

    For The Dough

    • In a bowl, combine the dough ingredients. Whisk until a thick pancake-like batter has formed.
    • Cover the bowl with cling film and then place in the fridge for 1 to 2 hours.
    • Prepare a saucepan of salted boiling water.
    • Remove the dough from the fridge and gently place spoonfuls of the mixture into the saucepan.
    • Cook for 4-5 minutes or until the dumplings have floated to the top of the water for a couple of minutes.
    • Remove the dumplings and drain them.
    • Leave the dumplings to cool and cut into bite-size pieces.

    For The Sauce

    • In a frying pan, fry the bacon for 5 minutes.
    • Add in the dumplings and fry for a further 3 minutes.
    • Pour in the cream, season with salt and pepper, and combine thoroughly for 3 minutes.
    • Plate up the Kniddelen and sprinkle with parsley.
