    Spam Dumplings in a Homemade Chili Oil Sauce

    I've never been a keen bean on Spam, but this recipe has converted me. These Spam Dumplings are truly delicious and are my go-to comfort dumplings!

    About Spam

    This canned food is a combination of pork meat and processed ham. It was introduced in the 1930s in the US and became widely popular in World War II. This accessible and inexpensive product spread to over 40 countries and became a frequently used ingredient in Asia, Hawaii, and the UK.

    The Spam Dumpling Filling

    It's as simple as chop, fry, blend.

    Here are the filling ingredients for these Spam Dumplings:

    • Spam
    • Cabbage
    • Soy sauce
    • Sesame oil
    • Rice wine vinegar
    • Spring onions
    • Garlic
    • Ginger
    • Sugar
    Dumpling filling

    Spam is a pretty salty ingredient. So, don't add any salt unless you are salt crazy! And, be wary of how much soy sauce you add in...½ a tablespoon should be more than enough.

    Oooof this is tasty, and the perfect addition to our cute little Spam parcels.

    Chili Oil is commonly bought instore. I feel like it's the kind of jarred ingredient that people don't think they can replicate. Well, you're wrong. This homemade chili oil sauce is SO good and SO easy! You'll be making jars of it before you know it!

    What goes in the chili oil?

    • Gochugaru flakes (Korean red pepper flakes)
    • Ground Sichuan peppercorns
    • MSG
    • Garlic
    • Ginger
    • Sugar
    • Sesame seeds
    • HOT oil

    Spam Dumplings in Chili Oil Sauce

    Ingredients
      

    Spam Dumplings

    • 1 canned SPAM, chopped into small cubes
    • ¼ Chinese cabbage, roughly chopped
    • ½ tablespoon soy sauce
    • ½ tablespoon sesame oil
    • 2 teaspoon rice wine vinegar
    • 1 spring onion, finely chopped
    • 2 garlic cloves, finely chopped
    • 1 cm ginger, finely chopped
    • 1 teaspoon sugar
    • 25 dumpling wrappers

    Chili Oil Sauce

    • ½ tablespoon gochugaru flakes (red pepper flakes)
    • 1 teaspoon ground Sichuan peppercorns
    • ¼ teaspoon MSG
    • ½ teaspoon garlic, finely chopped
    • ½ teaspoon ginger, finely chopped
    • ½ teaspoon sugar
    • ½ tablespoon sesame seeds
    • 100 ml HOT oil

    Instructions
     

    Spam dumplings

    • Transfer your chopped Spam into an oiled pan. Fry for 5 minutes until crispy.
    • Add in your chopped cabbage, soy sauce, sesame oil, and rice wine vinegar. Fry for a further 3 minutes.
    • Remove from the heat and transfer the ingredients into a food processor. Blend until a rough paste has formed.
    • Pour the Spam paste into a bowl and add in your chopped spring onions, garlic, ginger, and sugar. Stir until well combined.
    • Place a teaspoon of the Spam filling into the center of a homemade or store-bought circular dumpling wrapper. Line one semi-circle of the wrapper with water, fold over the dumpling and seal. Pinch the two ends of the crescent and bring them together to form a little bow (if this part is confusing, check out my video on Instagram!).
    • Repeat the previous step until all the filling and wrappers are used up.
    • Place the dumplings into a pan of boiling water and cook for 5 minutes.

    The Chili Oil Sauce

    • In a bowl, add in your gochugaru flakes, ground sichuan peppercorns, MSG, garlic, ginger, sugar, and sesame seeds.
    • Meanwhile, pour your vegetable oil into a pan on medium heat for 5 minutes or until really hot!
    • Once hot, pour the oil onto the chili ingredients and let it sizzle away!

    Serve up!

    • Once your dumplings are cooked, transfer them into a bowl and cover them with chili oil sauce!
