Transfer your chopped Spam into an oiled pan. Fry for 5 minutes until crispy.
Add in your chopped cabbage, soy sauce, sesame oil, and rice wine vinegar. Fry for a further 3 minutes.
Remove from the heat and transfer the ingredients into a food processor. Blend until a rough paste has formed.
Pour the Spam paste into a bowl and add in your chopped spring onions, garlic, ginger, and sugar. Stir until well combined.
Place a teaspoon of the Spam filling into the center of a homemade or store-bought circular dumpling wrapper. Line one semi-circle of the wrapper with water, fold over the dumpling and seal. Pinch the two ends of the crescent and bring them together to form a little bow (if this part is confusing, check out my video on Instagram!).
Repeat the previous step until all the filling and wrappers are used up.
Place the dumplings into a pan of boiling water and cook for 5 minutes.
