Prepare your guacamole dip by combining the avocado, red onion, tomatoes, lime, salt, and pepper in a pestle and mortar. Keep mashing until a smooth dip has formed.
Get your chilli leftovers, grated cheese, and chopped jalapeños ready to assemble your dumplings.
Place a teaspoon of the chilli into the centre of a wrapper. Place a pinch of grated cheese and one piece of jalapeño on top. Dab one crescent of the dumpling wrapper with water and then fold the dumpling into a four-cornered parcel. See my video on Instagram if you're struggling to do this part. Repeat this step with all of the wrappers.
Set your air fryer to "air fry" for 5 minutes at 200C. Place your dumplings into the air fryer and brush with vegetable oil. Cook for 5 minutes and then serve up with the guacamole dip and enjoy!
If you don't have an air fryer, pre-heat your oven to 200C or 180C Fan. Place your dumplings into the oven and bake for 15 minutes or until golden and crispy!
