Creamy Prawn and Chorizo Linguine

This gorgeous Creamy Prawn and Chorizo Linguine with a fresh spicy cherry tomato sauce takes less than 20 minutes to make.

Ingredients

  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 2 shallots, finely chopped
  • 130g chorizo, chopped into cubes
  • 200g uncooked prawns
  • 1 teaspoon chilli flakes add more if you like spice!
  • 300g cherry tomatoes
  • 1 teaspoon flaky salt
  • 1 teaspoon ground black pepper
  • 200ml single cream
  • 200g linguine
  • Handful of parsley, roughly chopped

Instructions

  • Place a non-stick frying pan on medium heat. Drizzle in some oil and then add in your chopped garlic, shallots, and baby tomatoes. Fry and stir for 5 minutes until the onions are caramelised and the tomatoes are soft.
  • Meanwhile, cook your linguine based on package instructions in salted boiling water. Once cooked, drain and set aside.
  • Next, add your chorizo to your garlic and shallot pan with your chilli flakes. Fry for 5 minutes and then add in your uncooked prawns and fry for a further 1 minute. 
  • Pour in your single cream and season with salt and pepper.
  • Pour your drained linguine into your chorizo and prawn frying pan.
  • Give everything a really good mix so that the linguine is covered in sauce, chorizo, and prawns. Serve up with a sprinkling of parsley and enjoy!
