- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 2 shallots, finely chopped
- 130g chorizo, chopped into cubes
- 200g uncooked prawns
- 1 teaspoon chilli flakes add more if you like spice!
- 300g cherry tomatoes
- 1 teaspoon flaky salt
- 1 teaspoon ground black pepper
- 200ml single cream
- 200g linguine
- Handful of parsley, roughly chopped
Place a non-stick frying pan on medium heat. Drizzle in some oil and then add in your chopped garlic, shallots, and baby tomatoes. Fry and stir for 5 minutes until the onions are caramelised and the tomatoes are soft.
Meanwhile, cook your linguine based on package instructions in salted boiling water. Once cooked, drain and set aside.
Next, add your chorizo to your garlic and shallot pan with your chilli flakes. Fry for 5 minutes and then add in your uncooked prawns and fry for a further 1 minute.
Pour in your single cream and season with salt and pepper.
Pour your drained linguine into your chorizo and prawn frying pan.
Give everything a really good mix so that the linguine is covered in sauce, chorizo, and prawns. Serve up with a sprinkling of parsley and enjoy!
