Green Tahini Miso Ramen

This delicious and super quick Green Tahini Miso Ramen is one of my favourite dishes to make when I only have a few minutes to make dinner!

Ingredients

  • 2 tablespoon tahini
  • ½ lemon, juiced
  • 2 tablespoon olive oil
  • 1 tablespoon sugar
  • 1 tablespoon miso paste
  • 1 garlic clove
  • Bunch of coriander leaves
  • 2 spring onions, chopped green parts
  • 50ml water
  • 2 packets of noodles I used Shin Ramyun noodle packets. If you want to use regular supermarket noodles, use 150g dry or 400g fresh.

Instructions

  • To a blender, add in your tahini, lemon juice, olive oil, sugar, miso paste, garlic, coriander, spring onions and water. Blend until the sauce is smooth and green. 
  • Taste the sauce and see if you would like to make it more salty (add more miso), more sweet (add more sugar), thicker (add more spring onions or coriander), more liquid (add more water), more savoury (add more tahini).
  • Set your sauce aside while you boil your noodles.
  • Get your packet of ramen noodles - I'm using Shin Ramyun, but you can use either a packet of instant noodles, dry noodles or fresh noodles - and cook them to package instructions using any seasonings provided.
  • Drain your noodles and then in that same pan, pour back in your noodles and sauce. Stir everything until all the noodles are coated in your green tahini miso sauce and then serve up with toppings of your choice and enjoy!
