Ingredients

For The Dough

  • 200g all-purpose flour
  • 100ml water
  • 1 teaspoon flaky salt

For The Filling

  • 4 herby sausages
  • ½ red onion, finely chopped
  • 3 garlic cloves, finely sliced
  • Handful of parsley, roughly chopped
  • 1 teaspoon flaky salt

For The Dressing

  • 3 tablespoon thick yoghurt
  • 1 tablespoon harissa paste
  • 1 tablespoon honey
  • 1 tablespoon olive oil

Instructions

  • In a large bowl, combine your water and flour with chopsticks until a rough dough forms. Knead it for a few minutes until a hard pillowy dough has formed, and then cover in clingfilm and set aside while you make your filling.
  • Next up, make your filling by combining all of your filling ingredients in a bowl. Mash with your hands until a paste has formed and everything is well combined.
  • Get your dough and roll out into a long sausage shape around 1 inch thick. Slice into 10 equal pieces of dough. Roll out each piece of dough into equal sized circular wrappers, around 0.3cm thick.
  • Place a small spoonful of the filling into the centre of the wrapper and then bring four corners of the circle into the centre and pinch together. Seal each four sides to make a square kite-like shape. Repeat this step for all your wrappers.
  • Place in the air fryer for 12 minutes at 340F or 170C. Keep an eye on them as every air fryer is different and you don’t want them to burn.
  • Meanwhile, make you sauce. Combine the harissa, honey, and olive oil in a bowl and microwave for 30 seconds.
  • Place the yoghurt on your serving dish and once your dumplings are cooked, lay them down on top of the yoghurt. Drizzle with your honey harissa dressing and more parsley. Enjoy!
