In a bowl, combine your sliced onions, carrots, spring onions, 2 tablespoon cabbage, and 2 eggs. Combine with chopsticks and then set aside.
In a large frying pan, add a knob of butter and turn up to medium heat.
Gently pour in your veggie egg mixture and form it into a square with a spatula (you want the omelette to be just a bit bigger than the size of your bread slices).
Fry the omelette on one side for 4 to 5 minutes and then flip over to the other side and fry for a further 4 minutes.
Place the cheese on top of the omelette and then sprinkle over the teaspoon of sugar. Squirt over some ketchup and then remove from the pan. Make sure to keep warm.
Add some more butter into the pan and then place in your bread.
Fry for 2 minutes on each side or until golden.
Assemble your Gilgeori Toast by placing one piece of bread on a plate, then your omelette, the leftover ½ tablespoon of cabbage, and the second slide of fried bread. Then, serve up and enjoy!
