Place a pan on medium heat and drizzle with 1 tablespoon olive oil. Add in the ground pork followed by the garlic, paprika, ground cumin, oregano, salt and pepper. Stir and fry for 8 minutes until golden brown. Break down the pork to remove any big chunks.
Once the ground pork has gone a lovely golden brown, add in the tomato passata and stir to combine. Cook for another 3 minutes. Then turn off the heat. Taste and season with more salt, pepper, or spices depending on your preference!
Meanwhile, in a medium-sized bowl, mash your avocado. Add in the chopped red onion, ½ lime juice, and season with salt and pepper. Mix and then give it a taste and season accordingly.
In a separate bowl, combine the sliced cabbage, mango, green chilli, red onion, and ½ lime juice. Stir, taste, and season with salt and pepper.
Once all your elements are ready, heat up the tortillas in the microwave for 30 seconds or for 30 seconds on each side over on the stove top (hob) in a dry pan. Then divide the avocado sauce between the tacos, top with ground pork, mango salsa, sour cream, jalapeños, and enjoy!
