Speedy Ground Pork Tacos

These speedy Ground Pork Tacos will take you around 20 minutes to make and they're absolutely delicious.

Ingredients

For the ground pork mixture

  • 400 g ground pork I used 20% fat pork mince, but for a leaner option, use 5%
  • 3 garlic cloves minced
  • 2 teaspoon ground cumin
  • 2 teaspoon paprika
  • 2 teaspoon dried oregano
  • 2 tablespoon passata or canned tomatoes

For the smashed avocado

  • 2 avocado
  • ½ red onion finely diced
  • ½ lime juiced

For the mango lime salsa

  • ¼ white cabbage sliced or grated
  • 1 mango finely chopped
  • ½ red onion finely chopped
  • 2 green chillies finely chopped (more or less chilli depending on your preference)
  • ½ lime juiced

Additional bits

  • 8 soft tortilla taco shells
  • 8 teaspoon sour cream
  • 8 jalapeños
  • 5 g cilantro finely chopped (optional)

Instructions

  • Place a pan on medium heat and drizzle with 1 tablespoon olive oil. Add in the ground pork followed by the garlic, paprika, ground cumin, oregano, salt and pepper. Stir and fry for 8 minutes until golden brown. Break down the pork to remove any big chunks.
  • Once the ground pork has gone a lovely golden brown, add in the tomato passata and stir to combine. Cook for another 3 minutes. Then turn off the heat. Taste and season with more salt, pepper, or spices depending on your preference!
  • Meanwhile, in a medium-sized bowl, mash your avocado. Add in the chopped red onion, ½ lime juice, and season with salt and pepper. Mix and then give it a taste and season accordingly.
  • In a separate bowl, combine the sliced cabbage, mango, green chilli, red onion, and ½ lime juice. Stir, taste, and season with salt and pepper.
  • Once all your elements are ready, heat up the tortillas in the microwave for 30 seconds or for 30 seconds on each side over on the stove top (hob) in a dry pan. Then divide the avocado sauce between the tacos, top with ground pork, mango salsa, sour cream, jalapeños, and enjoy!

Storage: Store all your ground pork taco elements in an airtight container and place in the fridge for up to 3 days. Wrap your taco tortillas in plastic wrap or place them in an airtight container too.
Freezing: you can freeze the tortilla shells and the ground pork mixture (in airtight containers for up to 3 months), but I wouldn't recommend freezing the mango salsa or the avocado sauce. 
Reheating: To reheat the ground pork mixture, place in a loosely lidded container and into the microwave for a minute or until heated through.
