Course: Main Course, Side Dish
Servings: 2 portions
- 2 (260g) salmon fillets
- 4 tablespoon ricotta
- 100g frozen spinach, defrosted
- 1 tablespoon harissa paste
- ½ teaspoon black pepper
- Pinch of salt
Place your frozen spinach in the microwave to defrost, then squeeze out any excess liquid and add it into a separate bowl. Add in your ricotta, harissa paste, some pepper, and salt for seasoning.
Lay your salmon down flesh side up. Gently slice the salmon down to the skin in the centre of the chunky part of the salmon lengthways vertically down the salmon (see image further up in this blog if you're unsure where to cut).
Place two tablespoons of your filling into each of the salmon, stuffing it into the cut. Place onto tinned foil and drizzle with oil.
Add your salmon into the air fryer and cook for 10 minutes at 370F or 190C (depending on your air fryer, you may have to cook it for less or for longer, so just keep an eye on it!).
Once your salmon is cooked, remove from the air fryer and serve up with pasta, rice, mashed potato, or whatever you fancy!
