Ingredients

  • 8 large raw prawns
  • 1 garlic clove, minced
  • ½ teaspoon sugar
  • 1 teaspoon soy sauce
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 egg white (keep the yolk for later)
  • 1 teaspoon cornstarch
  • 6 pieces of thick white bread
  • 1 egg yolk (leftover)
  • 1 teaspoon white sesame seeds
  • 1 teaspoon black sesame seeds
  • oil for shallow frying

Instructions

  • Finely chop or smash the prawns with your knife to make a paste. Add them to a bowl.
  • To the bowl, add your chopped garlic, sugar, soy sauce, salt, pepper, egg white (keep egg yolk for later), and cornstarch. Mix until thoroughly combined. You could blend the mixture to make it a super smooth paste!
  • Get your bread and cut them into 6 equal squares.
  • Place a third of the prawn mixture onto one piece of bread and cover with another piece. Use an angled spatula to press any overflowing prawn mixture back into the sandwich. Repeat this step for the other two sandwiches.
  • Drop the egg yolk onto a plate and whisk. Coat the sandwiches in the egg yolk.
  • Place the black and white sesame seeds onto a plate and dip the sandwiches onto the seeds covering both sides.
  • Pour the oil into a frying pan (around 1 inch deep) and put on medium heat.
  • Once the oil is ready, place in your prawn toast.
  • Fry for 2 mins and then fry on the other side for a further 1 minute or until golden.
  • Remove the prawn toast onto a plate with some kitchen towel to soak up the oil. Then serve up and enjoy!
